The Pollish

Recipe

Ingredients Method


The Poolish

  • 200g / 7oz Water  (bottled or filtered water is better as the Chlorine in tap water will slow down or even kill the sourdough yeast)
  • 50g / 2oz of your sourdough starter
  • 200g / 7oz Strong white bread flour
  • Room temperature around 8-12 hours


The Main baguette recipe

  • The made up poolish (see above)
  • 520g / 18.3oz Strong white bread flour
  • 320g / 11.3oz Cold water  (bottled or filtered is better )
  • 8g / 1tsp Salt 


-  3 Folds on every 45 minutes

1. Method

Levain: Mature liquid starter 100% 47g, white bread flour 11.5% 47g, Water 26C 47g. 3 hours @ 26C


Dough Mix: White bread flour 11.5% 510g, High protein flour 13% 60g, Water 400g, Salt 12g, Malt power 4, Levain 141g. (All flour and 300g water for 1 hour, then add 50-100g Water and all of rest)


Put it into a rectangle box with some olive oil inside. 


Warm bulk 3x30 mins. Total 1:45 hours


Cold bulk overnight in fridge @ 4-7C

2. Proof and Baking

Fold 4 turns become long olive shape 28cm long

Proof 1:45 hours

Preheat oven ad bake 26 minutes @ 230C +

Ingredients

450g High protein flour

100g Sourdough starter

15g salt

250g Water

材料(分為四個 Pizza Dough)

雞蛋 300克
意大利00麵粉 300克
Semolina 240克
木薯粉 30克

放在雪櫃冰格,可以儲存一個月以上。

真空儲存

分幾份,抽真空,放在雪櫃冰格儲存。焗pizza前1小時,沖水解凍。

合桃提子粿麥包 (17-48 小時中種法)

Water bath method 60 minutes

6 oz water 

2 rounded tsp instant espresso powder

50mL Kahlua

6 large egg yolks 

1 cup white sugar 

2 Tbsp milk 

1 1/2 cups heavy whipping cream 

1 tsp vanilla extract 

8 oz mascarpone cheese 


(2) 3.5oz boxes Lady Finger cookies unsweetened cocoa powder

蛋糕卷瑞士卷做法:

烤盤11.5x13寸 烤盤的長度有11寸,就可以捲起來。不同烤盤的大小,要通過計算烤盤面積的比例來調整配方。  雞蛋:5個 油:70克1/3杯+1 大勺 牛奶:60克, 1/4 杯 低筋麵粉:90克,1/2杯+2大勺 白醋:5克,1 小勺 糖: 55克,1/4 杯 鮮奶油:180克,3/4杯 糖:35克,3大勺 烤箱溫度: 320°F /160°C 烤30分鐘

Swiss roll ingredients:

Baking tray: 11.5 x 13 inch Other baking trays are OK too, as long as one side is longer than 11 inches. Please adjust the recipes if a different sized tray is used.  Eggs: 5 Oil: 70 g,1/3 cup + 1 tablespoon Milk: 60 g, 1/4 cup Cake flour: 90 g, 1/2 cup + 2 tablespoons White vinegar: 5 g, 1 teaspoon Sugar: 55 g, 1/4 cup Heavy cream: 180 g, 3/4 cup Sugar for cream: 35 g, 3 tablespoons Oven temperature: 320°F /160°C bake for 30 minutes

各種雪糕


加了蛋黃的雪糕比較美味,糖應該和蛋黃一起打,之後才混合鮮奶。加少許鹽可以提升味道。如果太多水份,可以加 Cream Cheese 25g左右。烘焙店應該有新鮮雲呢拿溶液Vanilla Extract賣,約$45-$50 一小瓶。
